Yummy Butternut Squash Soup
Chicken breast already cooked and shaved 
2 garlic cloves 
carrots, zuchinni, summer squash (any of your favorite veggies) 
2 cups of butternut squash 
1/2 onion 
extra virgin olive oil
4 cups of chicken stock
salt and pepper to taste
1/2 tsp basil
1/2 tsp rosemary
1/2 tsp oregano
1 cup of water
2 cups of spinach

1 heat oven to 425
2 roast veggies after coating with olive oil for 20 mins
3 bring chicken stock to a simmer and chicken and herbs.
4 add most all of butternut squash and onion in a blender with water and puree
5 add blended veggies and rest of none blended veggies to chicken stock
6 add spinach when about to serve for 5-10 mins
